Look at historial price trends

While many organic products are not traded like traditional commodities, observing and understanding price histories is beneficial. 

The price of organic, relative to the price of certified organic is a consideration for many customers.  A prolonged low or high period in a conventional market may also influence the number of potential competitors/collaborators entering or exiting the organic sector.  The price and volumes of conventional products can also impact the viability or availability or processing and storage infrastructure that are booked for special organic runs.

Examining prices locally over the course of a season can also help inform decision making about season extension investments, selecting different crops for different seasons and timing of livestock production and finishing.
